Have you ever encountered mushrooms in a sushi dish? Over in Las Vegas, Chef John Um remixed our mushroom tobanyaki recipe into a maki roll just in time for Autumn!

Over in Las Vegas, Chef John Um paid an early morning visit to the fish market to hand pick fresh mackerel fillets. Right now is the perfect season for mackerel in Japan!
